March: It’s Spring, and Ontario Eggs are the Star

All of our Challengers have hit the ground running and we’ve already started hearing back about the amazing things happening with local food. The March Challenge was to make a star of fresh, Ontario eggs. We received this amazing photo from the folks at Orillia Soldiers’ Memorial Hospital. Phil Taylor, their Food Services Manager, wrote:

“We have a hot breakfast available Monday to Friday in the cafeteria, and each day the chef has a signature special. Today’s feature is a vegetarian omelet with spinach, fresh Ontario mushrooms, Ontario onions, Ontario goat cheese, and roasted red peppers, decorated with a red paprika star. Delicious!”

The star, created with a stencil on each omelet, is definitely an appropriate motif for this fabulous showcase of Ontario eggs, produce, and cheese. For making local eggs the star (literally!) Orillia Soldiers’ Memorial Hospital will receive 10 bonus points. Way to go!

Keep watching this space for updates, and remember, you can play along at home too. Send your stories, photos, and recipes to khughes[a]greenbeltfund.ca, and you might see your story right here!

Coming up in April: Rhubarb is a vegetable we prepare like a fruit, but its tart flavour and beautiful pink hue can be used in both sweet and savoury applications. This month, do something cool with in-season Ontario rhubarb.
